I know OP doesn’t want to use Home Manager and doesn’t use GNOME, but for the other people who use it: you can configure it like this:

dconf.settings."org/gnome/desktop/interface" = {
  color-scheme = "prefer-dark";
  gtk-theme = "Adwaita-dark";
};
