I really mirror your frustration with the surface pro lineup haha, I used to use a Surface Pro 4 and it had a hardware issue with ‘ghost touches’ which would randomly occur on the display. There was a firmware patch for it at some point, buy it was discontinued lol :( the battery was also trash, lasted like two minutes unplugged back in 2020.
I’ll look more into the other devices you recommended though! I do have a laptop already, so I was thinking I could buy a tablet just to save money instead of buying another 2-in-1 laptop, but all those options look good so I’ll check them out! Thanks!
Probably not, maybe the ipad, but I’m trying to stay away from apple and I’ve had very bad experience with an old surface I have.

It still could be very privacy invasive, but since you opt-in (not opt-out) to its features, I wouldn’t consider it as invasive as microsoft’s.
So it’s like recall but not incredibly privacy invasive! Pretty cool!

https://cobalt.tools is a great downloader for a lot of different sites. If you do want a desktop app, I would also recommend Parabolic.
